Saucisses Merguez
Merguez Sausages
Ingredients:
2 lbs. ground lamb (30% fat)
2 tbs. water
1 head garlic – minced
2 tbs. chopped fresh cilantro
2 tbs. chopped fresh parsley
2 tbs. smoked paprika
1 ½ tsp. ground cumin
1 ½ tsp. ground coriander
1 ¼ tsp. cinnamon
2 tsp. toasted fennel seeds
½ tbs. Harissa
1 ½ tsp. salt
2 feet hog casings
Olive oil for cooking sausage
Method:
- Combine all ingredients except casings and olive oil in a mixing bowl and mix well.
- Using the sausage stuffing attachment of a stand mixer, stuff the casings with the mixture and twist and tie to make five inch links.
- Heat a grill or broiler. Prick sausages with a fork 2 to 3 times and brush with olive oil. Grill or broil sausages 3-4 minutes each side until cooked through.
